Broccoli Fritters Recipe

     They say a healthy diet includes 5-6 servings of fruits and vegetables each day, and that half of your dinner plate should be made up of veggies. And while I do love a good salad, and often crave green smoothies, I’m always looking for new ways to chomp on some veggies. 
     Broccoli is one of those vegetables that shows up on our grocery list pretty much every week. It’s so easy make as a dinner side, and we love to add a little raw broccoli into our salads. But if you really wanna have some fun with it, mash it up, add some cheese, and make yourself some tiny little broccoli pancakes. These things are so good, it will make you want to experiment with all kinds of vegetables. What else can I turn into a vegetable pancake? ANYTHING. 

*Serves 2-3*
-3 Cups Broccoli Florets, Chopped
-1/2 Cup All-Purpose Flour
-1/2 Cup Shredded Parmesan Cheese
-1 Egg
-1/2 Teaspoon Salt
-1/8 Teaspoon Black Pepper
-1/8 Teaspoon Red Pepper Flakes
-1/8 Teaspoon Hungarian Paprika 
-1 Clove Garlic
-4-5 Tablespoons Extra Virgin Olive Oil
-Light Sour Cream, For Dipping

1. Lightly steam your broccoli 2-3 minutes.
2. In a large bowl, beat your egg. 
3. Add remaining ingredients and mix well. 
4. Add steamed broccoli and mash everything together using a potato masher. 
5. Once everything is thoroughly combined, heat 2-3 tablespoons of oil in a frying pan over medium heat.
6. Add 4 spoonfuls of your mixture and lightly flatten with spoon, keeping a little space between each fritter. 
7. Cook for 2-3 minutes on each side, until lightly brown and crispy.  

     We like to dip ours in light sour cream, but you can get creative with this part too. And unlike most fried foods, these actually are quite good reheated, so go ahead and make enough for lunch leftovers too.
